So till now i only hear horror stories about the Netherlands and customs
and then we have capice with 30+ reps shipped to the Netherlands.

What is better to do airmail or ems or other couriers?

In total I have ordered and received over 15 watches and 'only' two got caught and they where in the same package

It is hit and miss... but make sure you use a dealer that sends you a new watch when it gets seized!!
